PROJECT'S MAIN OBJECTIVES:
- Contribute to the knowledge of the ripening process and senescence of fruits and vegetables.
- Study the role of substances produced or changed during ripening on the quality of fruits after storage.
- Solve problems related to pathological diseases and physiological disorders during post-harvest preservation.
- Study the operations and equipment for the processes of treatment, handling and commercialization of fruits and vegetables.
- Study the quality criteria that could permit the establishment of quality control methods.

PROJECT'S MAIN OBJECTIVES: This project aims to promote the consumption of fruits and vegetables of regional interest. One of the tools to achieve this goal is to determine the optimal time to harvest fruit and postharvest storage capacity as the main reason for the decline in consumption of fresh fruit is the lack of organoleptic quality with which it reaches the end consumer.
